I've tried ramen all over California, other states, and even in Japan, but Santouka's spicy miso ramen still remains my favorite bowl of all time. Perhaps my taste buds have been biased by nostalgia over the 8 years I've been coming to this location, but I still stand behind my opinion. There is something so unique about the flavor of the ramen here that I haven't really been able to find anywhere else. Other trendy ramen spots and their signature ramens start blending together in my mind, unlike Santouka. Santouka offers simple, solid bowls of ramen. They don't claim to be the best, and they really shouldn't need to. Honestly, I don't even think it's the best ramen I've had in terms of quality objectively. But I still always find myself coming back. I miss the cash-only days with the friendly, but no-nonsense, old lady at the front counter, but the ramen still tastes the exact same as I always remember it. I also want to highlight that the Irvine location gives WAY more noodles compared to other Santouka locations (like Costa Mesa).

The waitress there were so mean and NOT helpful at all. I went there first time today asked whatβs their popular dishes, they were cold. Also i ordered Miso soup, they gave me broth has NO ANY SALT in it, when i asked them to please give me some salt, that woman is so mean, didn't even want to give me or help me at all. I asked is their kitchen really doesnβt have any salt, she said no! And said we can give you soy sauce. I donβt like how cold her service is, seems care less about how you think or how you taste the food. If shes my employee, Iβll fire her in a second. Terrible service! Even i liked their Ramen, but i wont be back because of their unprofessional service. Wish they can have some better new waitress.

The base soup is not too greasy nor salty. Larger portions than expected. Pro/con that there are only 4 types of soups to choose from. But makes sense since most Ramen places have few variety. Their salt Ramen was good but the spicy miso tasted like Mala seasoning, which I'm not a fan of. The combo is just rice + whatever topping you choose so it's simple but it tasted great to dip the rice in the Ramen soup. Only wish is for them to have takuan as a default side menu to have a refreshing taste.
